This delicious Asian specialty is loaded with spices, carrots, lime juice, peanut butter and roasted peanuts. For every spoonful of this crazy rich Asian fare, you can feel the taste and crunchiness of the peanuts. It is highly recommended for dinner, lunch and get-together.

Ingredients
4 boneless skinless chicken breasts
2 tablespoons extra-virgin olive oil
Pinch of salt
Dash of freshly ground black pepper
2 thinly sliced bell peppers
2 minced garlic cloves
2 chopped large carrots
1 tablespoon minced garlic
1/2 cup peanut butter
1/4 cup low-sodium soy sauce
Juice of 1 lime
1 cup chicken or vegetable broth
1/3 cup chopped roasted peanuts
Garnish
Freshly chopped cilantro
Directions
Heat the oil in a large pan on moderate heat. Rub the chicken with pinch of salt and dash of pepper.
Cook for eight minutes each side until golden and blood is no longer present in the meat.
Transfer the chicken into a serving plate. In the same pan, sauté the carrots and bell pepper and cook for five minutes until soft.
Sauté the garlic and ginger, stir until aromatic for one minute.
Meanwhile, whisk in a small bowl the soy sauce, lime juice and peanut butter.
Pour the chicken broth and peanut butter sauce to the pan and simmer.
Put back the cooked chicken to the pan and add the roasted peanuts.
Simmer the mixture for five minutes, until the chicken is heated through
Garnish chicken with cilantro. Serve warm.Enjoy!
